DUCK RICE IN THE OVEN “À MINHOTA

Ingredients:

  • - 1 duck;

  • - 1 Limiana “Minhoto” Smoked Lean Meat Sausage;
200 g of Bacon Extra Limiana;
  • - 600 g of rice;
1 carrot;
5 onions;
2 garlic cloves;
1 egg;
6 soup spoons of olive oil;
  • - 6 mint leafts;
3 cloves;
  • - 1 lemon peel;
  • - 1 bay leaf;
  • - 1 handful of parsley ;
  • - Black peppercorns (according to your taste);
  • - Salt and white pepper (according to your taste).

Preparation:

  1. 01. Clean the duck and put it on a pot. Add the Limiana Bacon Extra. Peel an onion and a carrot. Cut the onion into quarters and stick the cloves in it, add it to the pot. Add around 2 L of clean water, the lemon peel, the bay and an handful of parsley, season it with salt and peppercorn. Boil it during 45 minutes. Remove the duck, shred it, discarding all the skins and bones. Cut the Limiana Bacon Extra into strips and the carrot into slices.
  2. 02. Peal 3 onions and the garlics. Cut the onions in thin half-moons and chop the garlics. Add them to a pot with half the amount of olive oil, cook it in low heat, season it with salt and pepper, mix it and let it cook for around 20 minutes. Remove it from the heat and add the duck, the Limiana Bacon Extra, the chopped mint leafs and a little bit of the duck broth. Mix everything.
  3. 03. Add 8 dl from the duck broth into a pot, add 4 dl of water, take it to the heat and let it get very hot. Peel and chop thinly the remaining onion, add it to a pot, add the rest of the olive oil and let it cook till it gets cooked. Add the rice, envolve it during 5 minutes, add the heated duck broth, rectify the seasoning, let it boil, reduce the heat, cover it and let it boil for 10 minutes. Turn off the heat, let it rest covered for some minutes. If necessary add a little bit more of the duck broth.
  4. 04. Turn on the oven with 210ºC. Add 1/2 of the rice in a clay tray, spread the duck above it and cover with the remaining rice. Brush it with egg, previously mixed with a little bit of water. Finally, add the slices of Limiana “Minhoto" Smoked Lean Meat Sausage, and let it cook in the oven for 10 minutes. Remove it and is ready to serve.
